SCHEZWAN SAUCE



      I am always facinated with new dishes and relishes.
                           I remember those days when I used to got to my 
                   friends  house who is Chinese, her mom used to store 
               special relishes that looked tempting in different bottles stacked in her fridge.



INGREDIENTS:

  • 2 tablespoons vegetable oil
  • 4 cloves garlic  finely chopped
  • 1-inch piece fresh ginger  finely chopped
  • 1 small onion  finely chopped
  • 6 fresh red chillies  finely chopped
  • 1/4 cup vinegar
  • 1 tablespoon sugar
  • 10 red capsicums desseded and finely chopped
  • 2 tablespoons tomato ketchup
  • 2 teaspoons salt
  • Water as needed
METHOD:


1) In a wok add oil and saute the garlics and ginger. 

2) Add the onion and capsicum and saute till capsicums start to become tender

3) Now add the red chillies and vinegar and simmer for 10 mins. Add water if it gets too dry.

4) Add remaining ingredients except water and cook for some more time.

5) Remove from flame ,cool and transfer into a blender.

6) Blend into a smooth puree , bottle and store in refrigerator.
