I had this chicken delicacy during my visit to Mumbai, the commercial and entertainment capital of India.
As you walk the streets of Mumbai your senses will tingle to the aroma of so many exotic dishes displayed on the streets. This dish in particular is one among them which hardly took 10 mins to be prepared right in front of my eyes making me enjoy every step of cooking this perfect dish.
INGREDIENTS:
- 1 kg chicken wings
- 4 cups flour
- 3 cups buttermilk
- 2 tbsp chilli pwd
- Oil for deep frying
- 1 ½ cups hot chilli sauce
- ½ cup ketchup
- 1 tsp chopped garlic
- 1 tsp brown sugar
METHOD:
- Mix together flour, buttermilk, chilli pwd and salt.
- Marinate the chicken wings in the mixture and keep in fridge for 1 hour.
- Heat oil in a wok and deep fry the chicken wings till crispy and done.
- In another pan, pour a tsp of the same fried oil and sauté the garlics.
- Pour in the sauce and when it starts to bubble on the sides add the brown sugar.
- Remove from flame and mix well till the sugar dissolves.
- Toss in the chicken pcs till all the sides are coated well.
