BARBECUED MUTTON CHOPS



The darkness of this meat comes from the barbecue sauce made right at home using dates.This home made sauce can be made in bulk and stored and refrigerated for weeks.

INGREDIENTS:
  • 2 ½ kg rib of mutton, trimmed of excess fat
  • 1 tablespoon ground coriander
  • 2 ¾  tsp ground cumin
  • 2 ¾  tsp paprika
  • 2 ¾  tsp ground ginger
  • 1 ½  tsp cinnamon
  • 2 tsp Freshly ground black pepper
  • ½  cup oil
  • 8 garlic cloves crushed
  • 1 medium onion, finely chopped
  • ¼  cup tomato paste
  • 2 tablespoons honey
  • 1 tsp brown sugar
  • 8 large pitted dates, minced
  • 2 tsp fresh lemon juice
  • Salt
METHOD:
  1. In a pan add half of the following ingredients : coriander, cumin pwd, paprika, cinnamon, pepper pwd, honey, sugar, dates and salt. Allow to boil.
  2. Simmer and cook till slightly thick and saucy.
  3. Add half of the oil.Mix well, strain and keep aside.
  4. Mix the rest of ingredients and salt. Rub on the lamb chops and keep for 1 hour.
  5. In a preheated oven or grill ,place the mutton rib and grill till half cooked.
  6. Rub some barbecue sauce and grill again.
  7. Grill the mutton till the meat is tender and done ,rubbing the barbecue sauce on it frequently not letting the meat to dry up.
  8. Cut into ribs.
  9. Remove onto a plate, garnish with some cilantro and pineapple pieces and serve with the left over barbecue sauce.
