A simple salad for a Lazy Sunday Brunch made with salsa that I make and store in my refrigerator. They are filling and simple to make.I can sleep till the sun hits me and wake up to make this quick dish that will set us for the rest of the day.
INGREDIENTS:
- 1 packet macaroni
- 1 cup cooked peas
- 1 carrot finely chopped
- 1 onion finely chopped
- 2 tbsps of salsa
- ½ cup cubed cheese
- ½ cup chopped pineapple
METHOD:
- Cook macaroni in salted boiling water.
- When done strain and add some oil and toss
- Mix all the ingredients and refrigerate for 1 hour.
- Serve cold with some cheese sprinkled on top.
INGREDIENTS
- 4 tomatoes
- Juice of one lime / 1 tsp vinegar
- 2 garlic cloves chopped finely
- 1 jalapeño chopped
- 1/2 onion chopped
- 1/4 cup coriander leaf chopped
- 1 teaspoon cumin powder
- 1 teaspoon chili powder
- salt for taste
- ¼ tsp black pepper
- Add all the ingredients in a blender.
- Process until the vegetables are finely chopped and the mixture is chunky. Taste and adjust seasonings to your liking. If you prefer more heat, add another jalapeño or more chili powder.
