PENNE IN WHITE SAUCE:



English dinners are incomplete with Pasta.The first thing my friends ask me when they walk in for dinner is "Whats cooking" and if don't hear the word Pasta they would be disappointed.

INGREDIENTS:

  • ½  packet  Penne (tubular pasta)/ any shape of pasta
  • 1 red capsicum cubed
  • 1 yellow capsicum cubed
  • 1 cup boneless cooked chicken cut into strips.
  • 1 tbsp flour
  • 1 tbsp butter
  • 2 cups milk
  • 1 cup vegetable stock/ water
  • 1 tsp white pepper pwd
  • Salt as req
  • 1 tsp oregano
  • 1 tsp chillie flakes
  • 1 tsp cream
  • 1 cup grated cheese


METHOD:
  1. In a big pan pour ¾ water Add 1 tsp salt and 1 tbsp oil and allow to boil.
  2. Add in the pasta and cook on medium flame checking in between to see if the pasta is done.
  3. When soft drain water through a sieve and pour a tbsp of oil into the pasta, toss and keep aside.
  4. In a heavy bottom pan, add butter. When it starts to melt add in the flour and keep sauté till the flour starts to change colour.
  5. Add in the milk continuously stirring so that no lumps are formed.
  6. To this add salt as per req, pepper pwd, chillie flakes and oregano and mix everything together.
  7. Now add the chicken stock and allow to boil.
  8. To this add the cooked pasta , half of the cheese and cream, mix well and cook for 4-5 mins on low flame.
  9. In another pan add 1 tbsp butter and a tsp oil and add the capsicums and chicken.
  10. Saute till chicken starts to become golden brown.
  11. Pour the vegetable, chicken mix into the cooked pasta and mix well.
  12. Pour it into a glass dish, sprinkle rest of cheese evenly on top and microwave for 1 min.
  13. Serve with some more chillie flakes sprinkled on top for that extra colour.
